The Story
In a working mine, the mine is the whole operation: the tunnels, the seam, the reason everything else exists. Here it is the story. Where Detroit Halite comes from, what it stands for, and how it works. You are standing in it.
The Drop
The Shop
Miners send rock down a drop to be brought up and hauled out. Here The Drop is where the coffee lands: Motor, Woodward, and the current Sankofa release. When a lot sells through, the next one drops.
The Drift
The Journal
A drift is the tunnel cut to follow the vein. The Drift follows ours: origin notes, new lots, and what is coming next down the line.
The Coffee
Why East Africa, and nothing else
Coffee was born in East Africa. Everything else is adaptation. The highlands that started it still grow the best of it: bright fruit, layered sweetness, cups with a point of view.
So the line is Kenya, Rwanda, and Ethiopia, and nothing else. One region, done properly, beats a map of averages. That is the whole policy.

An Akan word: return for what is yours. Detroit once stood for that return as Midnight, the last stop on the Underground Railroad. Our rotating East African single origin wears the name.

The Drop
One great lot at a time
Sankofa rotates. One exceptional lot at a time across Kenya, Rwanda, and Ethiopia, roasted light-medium so the origin does the talking, then retired when it sells through. The origin moves. The standard does not. When it is gone, it is gone.
The Work
Roasted to order in Detroit
Every bag is roasted to order in small batches in metro Detroit and shipped whole bean in 12 oz bags. Nothing gets roasted until someone asks for it. Nothing sits on a shelf. That is why the bag you open smells the way it should.
